POORIS WITH POTATO AND CARROT CURRY

Pooris: Pilsbury atta: 2 cups
Salt to taste
Glass of water
Mix everything together and make a stiff dough and leave it for 1/2 hr and then roll them out in whatever sizes u like and fry them.

Carrot Curry:
Grated carrot: 2 cups
Green chillies: 2
Salt to taste
Urid dal: 1tsp
Chana Dal: 1tsp
Mustard seeds: 1tsp
Curry leaves: few sprigs

Heat 1 tsp oil in a saucepan for tempering and as soon as the mustard seeds splutter, add chillies and carrot and put the lid for 10 min. Then add chilli powder and thats it really!!

Potato Curry:

Potatoes: 6 cubed
Onions: 2 sliced
Chillies: 4
Gram Flour: 2tbsp( mix in water)( pouring consistency)
Turmeric: 1tsp
Chilli powder: 1tsp

Take a saucepan and add potatoes, onions, chillies, salt, turmeric and chilli powder.Add glass of water and as soon as the potatoes are just boiled(don’t leave for 2 long as the potatoes get mashed), add the gram flour mixed water for thickening the gravy, u have to stir the curry while adding this and leave it in sim for few min. For tempering: add urid dal, chana dal, mustard seeds, curry leaves.As soon as mustard seeds start spluttering, add curry leaves and coriander leaves and add it to the curry and the most delicious potato curry is ready.

VADAS( GARELU)

One of my favourite dishes from Andhra

Ingredients:

Black Gram or Urid Dal white: 2 cups. Soak them for 4 hrs and grind into a fine paste.
Onions: 1 large
Green Chillies: 4
Ginger: finely chopped
Salt to taste

Mix everything together and keep it in the fridge for just ½ hr to make them more crispier.
I have seen few friends adding sodium bi carbonate as well. But mine come out very crisp even without adding it so u try in which ever way u like

Now eat oil and when it is really hot, take some batter into u’r hand and place it on a plastic sheet and make a small whole in between.

Make sure u’r hands are wet or else the batter sticks to u’r hand.Now slowly try to drop into the oil. Fry them until they are golden brown.

I like them with coconut chutney, they are absolutely delicious with or without chutney!!!
