
Ingredients:
Self Raising Flour: 2 cups
Eggs: 6
Cherries and Raisins: all colors and sorts ½ pkt
Baking powder: 2 tbsp
Vanilla essence: 2 tsp
Sugar: 1 cup
Butter: 1 cup
Start whisking the eggs with sugar and butter first and when u get a smooth paste, start adding flour in small quantities. Then finally add the cherries, baking powder and vanilla essence.
Grease the cake tin with butter and pour this cake mix into it and bake it for 1hr at 200 to 250 in the oven.
The most delicious plum cake ready. I think many of u must be thinking why I am saying plum cake without even using plums, I don’t know in Andhra, we call this plum cake which is simply superb and u can buy at all bakers
Roast chicken:
As christmas is round the corner, i started improving my culinary skills from now on so that my recipes would come out the best at the christmas party we are gonna have.
So tried this chicken roast this weekend and its absolutely amazing!!!

For the marinade:
3 freshly squeezed lemon juice
2 to 3 tbsp. olive oil3 tbsp. crushed black peppercorns or coarsely ground pepper4 tbsp. freshly chopped rosemary
4 tbsp coriander
1 tsp turmeric
2 tsp chilli powder
Combine all ingredients for the marinade. Pour over the chicken and marinate in the refrigerator for at least 3 hours, or overnight.
Place the lemon halves and rosemary sprigs in the cavity of the chicken if a whole bird is used. Roast chicken in a 425 degree oven for 30 minutes per kg . Do not open oven or baste chicken during roasting. If chicken is to be grilled, grill for approximately 20 minutes, turning once. Legs and thighs should be grilled an additional 5 minutes or until meat is not pink.
