Gongura Pachadi
I love having gongura through the year but its very difficult to actually grow them in winter outside. So what i tend to do is i start sowing the seeds in may outside in a large plot and pluck the leaves through every 4 weeks as leaves come up again so fast.
As I had so many gongura leaves, i tried to make a paste and freeze it for coming winter.
People might think I am a fanatic here but once u taste this, u will know what u are missing!! he he!!
I wash the leaves and leave in a colander and after some time, i spread it on a cloth so that leaves are completely dry, U need not do this if u are going to use the paste imme but if are storing better see to it that there is no water!!
Now Take 4 to 5 tbsps of oil and keep on frying these leaves with green chillies(if using imme) or red chillies( if freezing) until oil oozes out!!Add Salt
Let it cool and store in small freezer bags in quantities u like and u can use them in winter.
