Brinjal Fry

Filed in Vegetables 3 comments

I tried this recipe from Indira’s blog as i never used gram flour in any of of dishes other then potato curry i make specially for poories to get a thick gravy.

But this recipe sounded so different to what i usually make with brinjals. So i gave it a try to see if it goes well with poories. I was quite sceptical but the taste was amazing and i started making this everyweek as it goes well with chapathis or rice. So simple to make and yet so delicious.

Here is the recipe:
brinjals: 8
gram flour: 2 tbsp
dry red chillies: 4 to 5( its how hot u really want)
sugar and jeera: 1 tsp each
mustard seeds: 1tsp
curry leaves : 1 sprig

Now grind gram flour, jeera, sugar and red chillies and keep it.

Take a suacepan and add 1 tbsp of oil, add mustard seeds and curry leaves and as soon as it starts spluttering, add brinjals which are cut into pieces and fry them for a while.Try to avoid water.
As soon as the brinjals are cooked, add the grinded mixture along with salt and serve with chapathis or pooris.

You should try it with veggies like dondakaya/bendakaya. Sprinkle towards the end of the cooking process.
