Jackfruit and Strawberry Flan

May days have been quite wet in UK but that didn’t dampen noel nor me as we had loads of things planned to do this half term.


When the weather is wet, I tend to take him to Indoor Playcentres around Ipswich where you are guaranteed that u’r kids will run riot, enjoy, make new friends and most importantly getting out of the house.As I have taken couple of days off, We all had loads of things to do and to take him around.
His latest trip to Jan’s Madhouse was amazing as he went with his school friends and they had a splendid time there.The next couple days we went to cinemas to watch Spiderman 3 and Pirates of Carribbean. Time has just flown by and its already Friday and he slowly started taking his books out of his book bag to finish his home work.

We had a great time together going around places n meeting friends and I feel content when i see a happy face at the end of day which makes everyhting worthwhile.

Didn’t have time to come up with anything extraordinary for JFI-Jackfruit. To be frank, I am not a great fan of jackfruit, I love to have the ripe ones once in a while but never fancied any curry or anything. So I really looking forward for the round up so that I know what do to next time when I come across jackfruit seeds or raw jackfruit.


In the meantime I was quite happy to try a simple dessert with jackfruit and strawberries in whipped cream and added as a layer on a dry flan. Not many ingredients nor any elaborate method but a simple one with fresh fruit to enjoy after a dinner.


This wonderful forgotten fruit is the theme choice by the lovely Bee and Jai of Jugalbandi for the June, Jihva for Jackfruit and this is it!! My contribution to the great event.

WBB#11, Summer Fruits Round Up

This was such a warm summery event and what a great response from everyone who enthusiastically participated in this wonderful get together. Sea Trout with Asparagus and Spring Onions

The other day I saw Julia’s blog, A Slice of Cherry Pie and saw her event which she has teamed up with Cherry from Cherry’s English Kitchen and Scott at Real Epicurean for a regular blogging event based around seasonal produce.
I was quite intrigued and found it very challenging as we have to cook a dish with three seasonal products and create your own dish with.

And the May bag contained:

Asparagus
Sea Trout
Spring Onions

I made dishes with these ingredients in different recipes but never attempted to combine all of them.
I was quite apprehensive when I went to buy this fish at our local fishmonger and how to come up with a combined dish.
But I always liked a challenge and even without thinking twice, i created this wonderful dish and it was an absolute delicacy!!!
Both hubby and noel thoroughly enjoyed a hearty meal today.

So here’s the recipe
Sea Trout: 2
Ginger Garlic paste: 2 tbsp
Chilli powder: 1 tsp
Lemon : 1(squeezed)
Spring Onions, couple thinly sliced.
Salt to taste
Oil: 1tsp

Mix all these ingredients and rub on the fish and stuff in between as well.
leave for 1/2 hr and bake them in the oven at medium level(gas mask 7)
I usually wrap my fish in kitchen foil and cook for 15 min and then take it off and bake for another 5 min to brown the top. This wrapping in aluminium foil tip, i watched Jamie Oliver’s programme and i had been following ever since.

Grill Asparagus 5 min on either side on grill and serve immediately with the fish.

We enjoyed eating this delicious fish for lunch today.
