Roast Veg Puffs
Its been a while, I posted a recipe, its not that I haven’t been cooking but its because, I have been quite busy with other things that I hardly had time to even visit other blogs. I am sorry that I didn’t have time to visit your blogs and I have a lot of catching up to do.
I met my childhood friend, Kusuma after 9 years who came over to London on a short term project. It was so nice to meet up after so long and it was just amazing.
U tend to forget how many years have passed, how things change, how our own individuality changes but whatever the changes r, special friends will always hold a place in anyone’s heart.
We had a great time, catching up and reliving those wonderful school and college days which are buried somewhere.
I can go on and on but coming straight back to the dish I prepared as a starter when Noel’s friends came over for lunch the other day.
I hate to see children just living in their own world, not going out and just always staying within the comfortable atmosphere or people around them .
I feel the more they socialize with other kids, the more they learn how to behave and not always providing the kind of ambience they are comfortable in .
I have seen so many over protective moms who always try to keep them at home or always with them.
I feel so strongly about not letting the children learn in their own way, blend and enjoy and come to us asking for advice rather than making them sit at home.
I always make sure to take him with friends to movies, parks or anywhere and leave them to enjoyyy!!
Rather then going around as their shadow all the time!!
Now Now Now, let me get on with recipe or else I might forget why I started all this:
I made this Roast Veg Puffs for Noel n his friends, they absolutely loved them that they were asking for seconds and thirds in a split second.
They are so simple to make and yet so delicious.
Things Required:
Capsicum: 2 chopped
Sweet corn: 1 cup
Mushrooms: chopped : 1 cup
Olive Oil and Salt
Drizzle with olive oil and sprinkle some salt. Roast the above three on a roasting tray for 20 to minutes or until they are browned.
Take frozen puff pastry cases which are available in the supermarkets, I usually make these cases as well but didn’t have time this time so opted for an easy way and place them on a baking tray and bake them for 5 to 6 minutes.
Take them out and fill with the veggie mix and serve.
