Speedy Summer Desserts

You can do so much with the seasonal summer fruits then simply serving them just like that and Now is the perfect time to enjoy these wonderful summer berries sweet juices in a variety of desserts.
No one in our family likes desserts so I usually make desserts only when we have dinners but this week,i tried these two desserts which were an instant hit as they were not too sweet but so light n delicious.
Here comes the first one

Summer Fruit Flan:
1 Ready made flan, medium size one
Whipping cream
1 cup Strawberries
1 cup Raspberries
1 cup blue berries

Take the whipping cream and pipe in the shallow area of the flan and then press all fruits lightly onto the cream and serve immediately.

These fruit flans are not at all heavy but so light and tastes absolutely amazing and its a melt in the mouth.

The next dessert is Summer fruit Fool and you can use any fruits to get that vibrant colour.
I tried this recipe from the most famous James Martin’s recipe and tweaked little bit to add my personal tinge.

Summer Fruit Fool:

Ingredients
1 cup fresh strawberries
1 cup fresh raspberries
½ lemon, juice only
2 tbsp icing sugar
½ pint double cream
mint sprigs, fresh strawberries and raspberries, to garnish

In a food processor, blend together strawberries and raspberries with the lemon juice and sugar.
Sieve the blended fruits over a bowl to discard the seeds but I left the seeds because it gives a bite to that puree rather than being too soft.

In a medium bowl, whip the cream to soft peaks Fold half of the sieved fruit purée into the cream until you have a marble effect.In a small bowl, mix the remaining sieved fruit purée with the remaining fruits.To serve, place a quarter of the fruit and puree mixture in the base of two serving dishes. Top with a quarter of the cream and fruit mixture followed by the remaining fruit purée mixture and finally the fruit cream mixture. Garnish with mint sprigs and any left over fresh fruits.

They both look awesome, I didn’t know we get readymade flan. We only eat that in Mexican restaurants.

Oh yes, these are simple desserts and will truly bring out the flavours of the various berries. I also think that they are perfect for people, like me and your family who are not big on desserts.

Yes Cynthia, what u have is very true,my family can indulge only in simple desserts and so I look for healthy versions like fresh fruit and fresh fruit puree etc.

Hi,
Not to belittle you, but this seems like a recipe Rachel Ray made on 30-minute meals 2 days ago!!! Only difference was she soaked the flan in some vanilla syrup and rum flavoring. Also, she added custard on top, but has the exact same look!

there are so many versions and many dishes look the same but cooked in different ways.I like to tweak and twist to add my touch so i guess there is nothing wrong in that and btw who is this Rachel Ray?I live in UK and never heard of her
