Distinctly Delicious Chicken Ciabatta Sandwiches
These delicious Sandwiches go well under the grill or BBQ.As the weather here is gloomy, thundery and torrential at times, didn’t feel like spending too much time in the kitchen.
We had this simple healthy meal yesterday served with Mediterrean Couscous.
The chicken filling was grilled chicken with rocket leaves, tomatoes, sliced red onions and drizzled with a oil dressing …
We all thoroughly enjoyed these sandwiches, as hubby came very late yesterday as london-ipswich trains were delayed and was quite happy to dig into this tasty, vibrant meal on the table

How to make these:
Chicken Breasts : 2, cut into small pieces
Lemon: 1
Chilli powder, Turmeric, pepper powder, salt: 1 tsp each.
Marinade the chicken pieces with the above ingredients and leave it in the fridge for 1/2 hr.
Grill them in a pre heated oven 200degreed centigrade for 15 to 20 minutes until golden brown.
Before filling the ciabatta, drizzle with olive oil and serve with delightful couscous.
I was quite delighted with this delicious and versatile meal, it’s quick and easy.

Hey Padma, that sandwich is so good. Ciabatta bread is one of my favourite breads so naturally anything between it would always be yummy for me

Guess what, till an year back i never tasted this ciabatta but once when i went with my colleagues for a pub lunch, i had this most amazing chicken ciabatta with chips and rocket salad, it was heavenly!!! and my love for ciabatta started then!!crazy me!!
