Compliment Each Other

A week before last weekend I posted  this dish but found many of u unable to access it at the time and getting a error with this post . So here we are, doing it all over again as I have plenty of time now as I met my deadlines at work so not taking any work to home, no elaborate meals as Rocky is off to India for a week ( Ya!! yet again in a month) for his bestfriend’s wedding.

When its only me and noel, I suddenly become  lazy, trying to find simple dishes and spend more time chatting n watching rubbish movies and spend time in all other activities other then cooking.This time I decided to something new, some wonderful recipes from other bloggers and I have chosen Sailu’s Set Dosa with Sesame seeds chutney which i will post tonite. The batter is left overnight for fermenting and can’t wait to try them today as friends are coming over for a sleepover.

Anyway dear rocky will back on tuesday and noel is already planning to bake something for him again.

I made his  Favourites the other day - Mint Rice with King Prawns Curry - They were absolutely delicious and they compliment each other so well that its simply incredible!!!

Here is the recipe for Fragrant Mint Rice

Mint Leaves: 1 bunch

Ginger -Garlic paste: 2 tbsp

Red Onion: 1

Green Chillies: 2

Grated coconut: 3 tbsp

Coriander leaves: handful

Cinammon stick: 1

Cloves: 4

Cardemom: 2

Bay leaves: 2

First grind coconut, mint leaves, coriander leaves, chillies coarsely without adding any water.

Then take a saucepan, add a tablespoon of oil and fry bay leaves, cinammon, cardemom, cloves for couple of minutes and add sliced red onions and fry till the onions turn light brown. Now add ginger-garlic paste and saute for couple of minutes more and then add grinded mixture and saute for 5 minutes to let that raw smell go away.

Now add 2 glasses of rice and mix well.Add 3 glasses of water along with salt and let it cook on medium heat.

Within 20 minutes, Fragrant Mint rice is ready to serve with either chicken curry or prawns curry.

I made this with King Prawns as Rocky loves their meaty texture and flavour which goes very well with mint rice.

Recipe for King Prawns Curry:

King Prawns : 2 pkts

Red onions: 2

Green Chillies: 2

Ginger-garlic paste: 2 tbsp

My secret masala paste( grind 2 tbsp of poppy seeds with 2 tbsp of coconut and make a smooth paste)

Tomatoes: 3

Coriander leaves: bunch

Chilli powder: 2tsp

Turmeric: 1 tsp

Take a saucepan, add 1 tbsp of oil and fry sliced onions and chillies until they are light brown. Add ginger garlic paste and saute for couple of minutes, add tomatoes and saute for another 5 min. Now add prawns, chilli powder, turmeric and salt and put a lid on the top and leave it on medium heat for atleast 15 minutes.

When the prawns are nearly done, add the coconut-poppyseed paste and mix well.

Garnish with coriander and serve with White rice or Chapathis or Pittas. We had with Mint Rice.

    Padmaja - thanks for dropping by. Am glad the post could nudge your spiritual side, which is always so important. I cant tell you how much I am drooling over the prawns They are my favorite. If you read my various comments on various blogs, you’ll probably know how crazy I am about prawns. You rice looks lovely too!!

    Oh Padmaja,

    I am definitely going to have to try your mint rice - my husband dislikes pudhina, but I think this might be one way I could sneak it in.

    Your curry also looks good - I am trying to think what I can replace the prawns with to make this a veg kura; perhaps paneer would have the texture closest to the prawns?

    How did I miss this post …? hmmmm The dish looks so rich and succulent Padmaja…..I am a veggie though :-(
