Mini Peach & Pistachio Tarts
Sounds amazing right? Ya even tasted incredible!!!I had a small get together at home last week and thought of trying something sweet n tasty.English peaches are lovely in Late Autumn and they look stunning on the plate , can be served warm or cold. The beauty of this recipe is its so simple n easy to make.

I adapted this to my taste from the original recipe( www.bbcgoodfood.com). I usually see my kind of recipes in their amazing magazines n online, some of them are simple and some,as complicated as Gordon Ramsay’s. I feel he makes it more difficult to even try a simple one by his complex way of making. Where as I find Jamie Oliver, doing exactly the opposite, he makes an complex dish look so simple to make.

With hubby being away and friends calling for dinner so that myself n noel are not alone, lucky enough not to cook any dinners at home all the week… Tasted some amazing cuisines from kerala to punjab, from mumbai to calcutta. Each dish was unique in its own flavour n taste n making. I too make some of those dishes at home, but they taste never the same. They love my dishes n I love theirs!!! Thank you R, G, Se and D for those amazing dinners n times.

I made these mini peach n pistachio tarts for the first time for this Incredible event, AFAM -Peaches hosted by amazing Mansi
Ingredients:
Pistachios: handful( grind them in a blender to a fine texture)
Butter: 100gms
Egg: 1
Sugar: 50gms
Puff Pastry: ready made or rolled up one 250gms
Peaches: 3, havled, stoned n finely sliced

How to make:
Beat Pistachois, butter , egg and half the sugar in a bowl and mix.
Roll the pastry out to a thickness of a 20p coin and use a saucer or lid to cut into 4 circles
Place these pastry circles on a baking tray and scoop a tablespn of pistachio mix and spread evenly. Arrange the peach slices on the top and bake them 20 to 25 min at 220C.After 10 minutes or so, sprinkle the ramaining sugar generously on the top.
Bake for another 5 minutes or until the pastry is crisp and the peaches topping is sticky and caramelised.
These gorgeous mini tarts have that amazing lingering taste which are an absolute melt in the mouth.

Wow they just look so delicious and yummy. I would love to have them.
You are correct when you say Jaimies recipes are easy to make. And i look through the Ramsay book in the library but never ever trie to make them. It always look so complicated.
