Omelette Bites

What a week this was?With half term in England and most of the schools are closed for a week, Its  time for working moms like me to think about activities, fun n friends to keep the children busy n active and not to make them lethargic or sit at home.

On one side the weather is gloomy n dreadful and on top of that its depressing so I just get out of the house n do something worthwhile. There are so many wonderful activities for kids like holiday camps, jungle jamborees, halloween trails n sports clubs all around us and its such a pity if you can’t involve children in all these activities.

I have taken 3 days off this week  to spend time with noel and it was so amazing to get up late in the morning, with a cup of hot chai, mid morning tv, wow thats sounds incredible!!!Time flies when at home, I write a list of things to be done and  after driving noel to all his activities, you come home completely knackered and won’t even have time to cook. But I enjoy being on the run organising something or the other and always keep myself busy. Its fun really!!

We were called to one of our friend G who bought recently an amazing house  near to ours and she invited few friends for a cuppa. Noel was so excited that he will be going to theirs for 2 days, as she planned a movie and kids restaurant the very next day when I went back to work. They watch “Ratatouille” and said it was simply incredible!! Noel and J couldn’t stop talking about it and I knew then itself that I have to go n watch later.

Next week is Halloween and I am, oh yes you heard it right invited few friends for a  Scary Halloween trail at home. I love doing this kind of stuff for kids. More of that scary stuff next week till then enjoy this simple omelette bites I made on of the days I didn’t have time to cook.

Its an amalgamation of frittata and spanish omelette and I just can’t wait to  send my dish for WBB#16 organised by Beautiful Kanchana

Ingredients Required:

1 large onion sliced

2 large potatoes thinly sliced

2 large peppers green or red or orange thinly sliced

5 eggs

4 green chillies

2 tbsp olive oil

Salt to taste.

Take a saucepan and fry onions, green chillies and potatoes in 2 tbsp of olive oil until they are soft.

Add sliced peppers and salt and cook for another 5 minutes.

Let to cool to room temperature and then add eggs, salt and u can add pepper powder if u want to. Mix it well.

Now pour into a Square baking tray, I used Le Creuset which is just perfect for this as it won’t stick to the base.

Put it in the oven for approximately 15 to 20 minutes at 200C.

Cut them into squares and Serve with salad or on its own.

Simple and stylish and not only pleasing to the eye it was without a doubt,  blissful.

its fun to be with kids and also quite tiring. i wonder how our mums managed so many brats during holidays ;) good to know u r having gala time with ur son.

Linda ya, i absolutely love work n home so its hard to balance both but i try not to get into those guilty phases when i take my work home.
But noel is so adaptive n understanding so its really a boon—padmaja

Excelent delicious omellete.
Here my daughter is having her one week holiday this week. So enjoying sleeping late, on school days she have to be in school by 8:30 so i have to get up early to send her for school.

WOW! This looks soooo delicious and easy. I will try it out and take pic of it soon. I will be trying this on a frying pan instead of oven though since I don’t have a baking tray.
