Simple, Graceful Veggie Noodles

Its one of those days where Noel can get what he wants, Whenever he does something good at school, we try to reward him with his favourites. As parents, we both try to do whats best for our kid and when I moved Noel to a new school in September, I wasn’t 100% sure whether we are making a right decision, whether we may regret our decision when Noel finds it hard to adapt to the new school.

Had many sleepless nights trying to really decide when we heard from the school that they are ready to offer a place for Noel.

Rocky who is so supportive and knows that whatever I do is best told me or assured me one thing, If I really want to then change to the school which is a minute  away from my work and  rated as one of the best schools in our town. So this September he started over there with few tearful weeks, few excuses and to my amazement, I can see an amazing change in him. He is more settled, have loads of friends and the best part he is a topper in the class. This new school has an atmosphere which is  amazing to any child, teachers so full of life, always smiling and parents so friendly.

I completely forgot that suddenly on one fine day I realised that I just started Noel here couple of months back, no regrets for anything whatsoever. His teacher told us last week at the Parents Evening that he has settled down well and it seems he is one of the top reader in the class and so he is gonna prepare an article and read at christmas performance next month. He is totally over the moon and started researching along with his fav teacher for the article.

 It reminded me of my childhood days where we used to love going to school not only to study but for other amazing extra curricular activities as well. The fun surrounding it, participation in elocution, skits, dramas, dance and sports. There used to be always something or the other to look forward to and this school is just the same. Whenever I hear Noel telling me all those fascinating things they do at school, I know for sure that I haven’t made a wrong decision at all.

Chinese Noodles is his favourite n would love to have it more often so I decided to make them for him and I remembered our lovely n Busy Bee ’s  “Click Event“  as well  so I made these veggie noodles which were so simple, graceful and ready in minutes!!

Ingredients:

Noodles: 1pkt

Capsicum( red, orange or yellow) : 1 cup

Ginger garlic paste: 1 tbsp

Spring onions: 1/2 cups roughly chopped

Soy sauce: 1 to 2 tbsp

Sunflower oil or Sesame Oil: 1tbsp

Salt to taste

Take a saucepan with water, add salt and a teaspoon of oil and boil. As soon the water starts bubbling, add noodles. Leave it for 5 minutes and drain the water.

 Take a large Wok, as soon as the wok if hot, add oil , ginger garlic paste and saute for a minute, make sure its on high heat  and add all the veggies into it and saute for 5 minutes on high heat. Vegetables cook so fast so keep an eye on it and do not burn it, Now add soy sauce, salt  and Noodles. Mix them well and serve immediately.

For Non veg version, you can use prawns, chicken or pork. Its amazingly simple n graceful.
