BBQ in Autumn

We went to one of my close friend R’s birthday party last week, it was a huge party and enjoyed thoroughly as it was on a weekend, I hate to go out on weekday unless its absolutely necessary anyway R’s and S’s family came over for a cuppa on Sunday morning to say thank you for all the help me and Rocky did.It was a special birthday
S’s hubby loves my prawn dishes and asked me if I can make some snacks with it next time they come over for a dinner, we said yes and started chatting, the late morning tea has moved till lunch and I could see the guys deeply involved in their discussions which made me think of cooking some lunch together, so there we were in the kitchen trying to make some simple lunch for those hungry men.
I have a George Foreman’s Indoor Grill which Rocky uses most of the time for his weekend breakfasts for sausages, bacon etc. I wanted to try grilling my prawns and veggie skewers.
You can use the normal grill if you want. They were so simple to make but the taste made them want for more n more!!
We girls n kids ended up gobbling few in the kitchen itself as the guys were pouncing upon the plates as soon as I place few more.
Here are my simple recipes first for
Prawns BBQ:
As we had kids around who were little fussy when I make them spicy, I avoided chilli powder this time but used full green chillies which can be removed for those little ones.
King Prawns: 2 pkts( frozen or fresh)
Lemons cut into small chunks
Full Chillies cut into small pieces
Salt to taste
Oil( preferably sunflower) : 1 tbsp
Lemon juice: 1 tsp
Mix all these Ingredients and leave it in the fridge for 20 minutes.
Now Thread prawns, lemon chunks and chillies into the wooden skewers, which were soaked in cold water for 10 minutes to avoid burning and when the grill is medium hot, place them on the grill. Avoid turning them too often. One 5 minutes of each side and juicy n succulent barbecued prawns were up for a grab.
Vegetable skewers:
Red onions: 2
Paneer: 1 pkt
Yellow pepper: 1
Red pepper: 1
Sunflower oil: 1 tbsp
Pepper: 1 tsp
Thyme: 2 tsp( I used dry)
Rosemary: 1 tsp( again dry but you can use fresh if u want, I didn’t have any in my fridge so opted for dry herbs)
Salt to taste
Cut all the above vegetables into big chunks. Mix all the above mentioned ingredients and leave it in the fridge for atleast 20 minutes.
Thread them to the wooden skewers soaked to water to avoid burning but mine did as I didn’t have time to soak them.
When the grill is hot, place them on the grill. Avoid turning them too often. One 5 minutes of each side and that’s it really.
Looking at the way we all enjoyed our simple lunch, I knew that these skewers will be requested by my friends very soon.

I wouldn’t say you are crazy because we grill outside in the chilly weather too and I think it’s the best time now than grilling at 100F Summer heat!:D

Look at those beauties… There is no law against grilling in winter, right? We used to do it all the time when we had our own grill, now we have to go upto the terrace, and that is too much work

Oooooooooh these are so droolworthy…haven’t grilled prawns yet mainly because D does the grilling and it is best for him if does not have prawns
