Veggie Pockets
Noel’s school started and so has his activities as well. He has joined in couple of new sports clubs which is keeping everyone busy n literally on our toes all the time and I hardly get time to sit with my laptop as there is always something or the other I need to attend do. One minute, I have been chauffeuring him to different sports centres for different activities every week next minute dishing up something and very next minute off to my health club n badminton club as soon as Rocky is back from London. Badminton is one of my favourite racket sports which has been faded away from my life for nearly 10 years and suddenly our bunch of friends casually started chatting and badminton creeped up in our discussions and couple of months back we started a club at local sports centre and had been playing for more then 2 months now. It started with few members but now its a full fledged club with few competitions in line for us in near future.

Its such a wonderful my time I spend for myself either relaxing in the pool or a have game of badminton or enjoy dinner with friends. I feel everyone should rejuvenate their zeal and energy and spend time for themselves doing things for yourself as its very important in the long run. My job, family and household chores does make me tired sometimes but with help from husband and little time for yourself can work wonders on anyone.
With so much to do every weekday, I am desperately for recipes which are quick n easy. I tried this super quickie when I just had 1/2 hr to whip up something for our dinner last week.

Vegetables needed:
I used whatever were there in my fridge like potatoes, butternut squash, red n green peppers.
Potatoes: 2 (peeled and cut into small pieces)
Butternut squash: 1/2(peeled and cut into small pieces)
Red and Green Peppers: 1 each (cut into small pieces)
Chilli powder: 1 tsp
Green chillies: 2
Ginger-garlic paste: 1tbsp
Take a wide bottomed saucepan and add a tablespoon of sunflower oil, fry green chillies for a minute and then add ginger garlic paste and saute for another minute.
Add all the vegetables and put a lid on the top to make them cook fast. As soon as the vegetables are just cooked, take of the lid, increase the flame to medium and fry till they slightly brown. Now add chilli powder and Salt.
Serve with onion rings and for kids you can mix some cheese which I did seperately for Noel.

A simple recipe always comes in handy for busy times like this and if the the taste is mouthwateringly cheesy then nothing to beat it.

Oh, tell me about it! I have 2 kids I haul everywhere. Even when we had 2 weeks X-Mas break from school, I drove Trisha to volunteering place everyday! It’s a full time job with these kids!:)
Time for yourself at Badminton sounds great though, I don’t get any of that except after 9.30pm when younger one goes to bed!
Dish looks good, great way to clean up all the itty bitty leftover veggies!:)

That’s a yummy idea for a quick and handy recipe for those busy weeknights. I love badminton too and used to play regularly in school.

I too love badminton and used to play it a lot while growing up…not anymore. We do have the rackets lying around somewhere gathering dust!

Its fun and we play with Noel as well. I was boasting to rocky that how well i used to play in college n all and told it will teach him, how stupid of me, when we went to court he told me that he was a champ in engg college and i was bombarded with smashes. Imagine my face!!!!
But its fun!!

Hi Padmaja,how are you?Wish you a happy new year..oh dear,tell me about the bug….we all were sick(me,hubby and the kid) with tonsilitis and the kid caught that bug even though we never went out for all the Xmas hols!those wraps look very nice, and a great way to make a quick meal with a measly stocked fridge:)

I too love badminton. But just play them in summer time here out side in the park if the weather permits. And as you know last summe was really horrible didn’t even play it once

How do moms with a professional job manage ? I guess they have to compromise somewhere - not that many activities for kids, or not too much work at office, or at the cost of their own health.

Our civil engg consultancy is very good for moms like me. I started full time 5 yrs back and then slowly cut down my hours so that I can spend time with Noel. But i think very few companies give such flexibility.
So you have to compromise somewhere as u said.
