Chicken Curry with Chapathis

This was our sunday lunch, a typical andhra style chicken curry with chapathis. Every sunday back at my place or at rocky’s, we have a traditional meal together, it more like a family get together where we all tend to be at home for lunch.


During weekdays, with hectic schedules, its really hard to sit together and enjoy a nice meal

Sundays are so special to us and for me especially b’coz its my dad’s fun time in the kichen.Being a busy Doctor, my dad used to always cook a Non Veg meal, either fish or lamb or my fav chicken.


My mom used to have a relaxing sunday while my dad used to toil in the kitchen, trying to cook a superb meal.Here is his recipe which i already posted for chicken curry

Chicken Enchiladas

There aren’t many things that are quite as irresistable as cheesy baked enchiladas which are served straight from the oven.
We enjoyed this delicious tender pieces of chicken, snugly wrapped in super soft corn tortillas and baked in a tasty cheese and tomato sauce all bubbling and golden.
Things needed:
Enchiladas tomato spice,spice mix which u get in any mexican shops.
Grated Cheese: 1and 1/2 cups
Chicken: 1/2kg(boneless, cut into thin strips and stir fry.
Stir fry those thin chicken strips over medium heat.
Prepare the mix by adding hot water to the spice mix and tomato sauce.
Now mix 1/2 grated cheese into this mixture and pour it over the chicken and stir it well.
First wrap the corn tortillas in kitchen foil and heat in oven for 10 to 15min.
Now spoon the mixture onto the middle of each warm tortilla, roll n place fold down in the dish.

Pour the remaining sauce on top of each tortilla and sprinkle with the remaining grated cheese.

Bake in a pre heated oven for 10 min.

U can replace chicken and go all veggie as well. replace chicken with mushrooms and butterbeans, even that tastes amazing!!
