Chicken Pockets

U can make these pockets with different stuffings like vegetable, potato pockets, chicken or tuna as well. So easy to make and such a healthy snack as well.
Kids love it and Me as well!!

For Pitta Pockets:
Pitta Bread: couple
Cucumber: ½ cut into small pieces


Tomatoes: 1(sliced)
Onion(Pink): sliced
Lettuce: few leaves (chopped)


Ingredients:
Chicken Breasts: 2( cut them into small pieces)
Marinade:
Ginger garlic paste: 2 tbsp
Lemon: 1
Oil: 2 tbsp
Turmeric: 1tsp
Chilli powder: 2tbsp
Salt to taste

Add all these to chicken pieces and leave in the fridge for couple of hrs and then shallow fry them.

Now mix all these with chicken and fill the pitta pockets and the taste is amazing!!!!I usually toast pitta bread for couple of min in the toaster

Christmas Roast Chicken

Roast chicken:
As christmas is round the corner, i started improving my culinary skills from now on so that my recipes would come out the best at the christmas party we are gonna have.
So tried this chicken roast this weekend and its absolutely amazing!!!

For the marinade:
3 freshly squeezed lemon juice
2 to 3 tbsp. olive oil3 tbsp. crushed black peppercorns or coarsely ground pepper4 tbsp. freshly chopped rosemary
4 tbsp coriander
1 tsp turmeric
2 tsp chilli powder

Combine all ingredients for the marinade. Pour over the chicken and marinate in the refrigerator for at least 3 hours, or overnight.
Place the lemon halves and rosemary sprigs in the cavity of the chicken if a whole bird is used. Roast chicken in a 425 degree oven for 30 minutes per kg . Do not open oven or baste chicken during roasting. If chicken is to be grilled, grill for approximately 20 minutes, turning once. Legs and thighs should be grilled an additional 5 minutes or until meat is not pink.
