Strawberry Meringue Nests

As i was visiting other blogs, i suddenly saw Meeta’s Monthly Mingle and today is the last day, I missed her earlier, Arabian one as well so here I am trying something very simple but elegant Strawberry Meringue Nests.

With so many fresh fruit and Vegetables in the markets, its wonderful to pick those vibrant and deep coloured fruits and try something simple.
Last weekend, we went to Norwich through our wonderful England Countryside and on our way stopped at a farm shop pick my fruit and veggies.
We as a family make sure, the fickle english weather doesn’t dawn our enthusiasm anytime and we make sure we go out on any day and see our beautiful countryside, lovely green moors. An 1 hr drive hrough the countryside is enough for anyone to liven up and there are thousands of walking trails all over the country, so we try discover them here and get walking!!!

Now back to my simple recipe:

Meringue nests and any fresh fruit thats available in that season.
I chose
Strawberries
Kiwi Fruit
Peaches
Apples

Cut the fruit into wedges.

Now for the filling, add whipped cream until it fills to the top and place the fruit on top of it and serve.

Noel was thrilled to look at those fresh fruit on those meringue nest and he is just waiting for his dinner to be served so that he can have this simple and light strawberry meringue nests

Fruit Salad with Custard

This simple summer fruit salad is best made with very ripe fruit as it contains no additional sugar


The combination of fruit can be varied according to the season, making use of strawberries and cherries early in the summer, and grapes and plums later on. Serve it with custard for a special occasion, otherwise it makes a delicious light desert on its own.

For the fruit salad:
Finely chopped
Apples
Bananas
Mango
Peaches
Seedless grapes
Pineapple
Kiwi fruit
I like to add whatever fruits available in the season.
1 tablespoon lemon juice
For the custard :
1 pint whole milk 2 tablespoons vanilla custard powder 1 tablespoons sugar
Mix the custard powder and sugar in couple of tbsps of milk and keep it aside.
Heat the milk in saucepan and when it starts boiling, pour this milk into the custard mix and mix it thorougly and pour it back into the sauce pan and simmer until the custard thickens.

Let it cool and add all thefruits and keep it in the fridge and serve .
