Power Packed Greens

We are little picky with our greens here. I shouldn’t't be saying anything about my son here as I was just the same when I was little. I remember picking up those small coriander leaves, mustard seed and garlic in daals and everything. On top of all this I used to complain to mom why she used to add all those yak things. Little I know how they enhance those subtle flavours in those simple dishes.

Coming to greens, Dad used to be a great fan of them and would love to have them everyday. For him that’s a ultimate healthy meal and for me, its just the other way round, i used to gobble up at once and imme have a glass of water.

How strange is life when you see your little one doing the same. No curry leaves, no coriander, no spinach and the list goes on and on. He is not at all fussy except for these little things. One thing he doesn’t like is spinach in dal. So I have been inventing few recipes where I can sneak in a bunch of baby spinach leaves here and there in my salads, rotis and now even my snacks as well.

I have an event planned on Saturday where I am  about to showcase my potato tikkis.

I wanted an element of surprise in otherwise normal potato tikkis.

I looked around in some blogs to find an ultimate recipe and found this absolute beauty at Sailu’s, with all the ingredients I wanted to be in my tikkis.

I tweaked and twisted the recipe to suit my palette.

Ingredients:

1/2 kg packet of baby spinach, roughly chopped

2 large potatoes, boiled, peeled and mashed

1 large onion, finely chopped

1 tsp grated ginger

1 tsp chilli powder

1 tsp turmeric

1/2 lemon squeezed

Salt to taste.

Mix all the above ingredients and make them into whatever size patties you want  and keep them aside.

Shallow fry these patties with a drizzle of oil now and then. 2 minutes on either side and serve them with tomato ketchup.

The final result was absolutely  delightful. I loved those beauties along with Noel and couldn’t stop with a couple.

Rocky hasn’t tasted as yet but I am sure what he is going to say!!!!!YUM YUM YUM!!!

Hospital Days n Chicken Salad

One of my nightmares have come true in last couple of weeks.
A hectic weekend ended in chaos, A normal routine to work on a lazy monday morning changed to rushing to the hospital, blood tests, examinations and everything you dread and there I was completely dazed at the pace of things happening to me.
Family not allowed after the visiting hours so Rocky and Noel had to leave me and so there I was suddenly in couple of hrs all by myself and in thumping pain.
I found the whole experience quite overpowering. I always disliked hospitals and its may be b‘coz I was living in that atmosphere throughout my life as dad being a doctor.
And as I am quite a sensitive person, I get effected when I see and hear those distressed stories of why other patients are in there, you really think how fortunate you are.
But anyway I am back to myself now and away from those horrifying week, trying to get back into routine. When you think life is just the way you wanted with less hassle and bustle, yearning for a peace of mind , Swiftly things change in such way that it makes you comprehend what really imperative in anyone’s life.
Sorry to turn you all with my worst nightmare but felt like sharing with friends and that’s what friends are for right? In happy days and in sad days!!
I am taking things slowly so spending a lot less time in the kitchen and making some simple salads to go!!

I made this salad yesterday, a pretty simple chicken salad which can be had on its own or with Mediterranean cous cous which is exactly the way we had.
Nice simple delicious salad which was ready in 10 minutes

How to make:
Chicken breasts: 3 cut into small pieces
Ginger-garlic paste: 1 tbsp
Salt, turmeric and chilli powder: 1 tsp each
Mix all these ingredients and shallow fry them in 1 or 2 tbsp for 10 minutes on medium heat.And add these succulent pieces to Rocket salad, chopped red onions, jalapeño peppers, cucumber and plum tomatoes and serve immediately
