Prawns Biryani

Things at home and work are going at such a rapid pace, that I am not even getting time to have a nice cuppa and be five minutes on my own. I love blogging and would love to read about  dear fellow bloggers’ wonderful creations.

Never was I so tied up that I haven’t had any decent time to enjoy reading and blogging.

My new novels were left unturned, my cooking magazines are still at my bedside and my drafts are piling up.

I am relying on my one pot dishes more often then I imagined with my time being spent elsewhere.  Yesterday I made Palak Parathas which were just a melt in the mouth with a tinkling taste of spice, Today I dished up this Prawns biryani, which also went so well that I turn to this comfort dish every now and then.

Prawns: fresh ones
Ginger garlic paste: 2 tbsp
Onion : 2
Chillies: 4
Garam masala: 1 tbsp
Coriander powder: 1 tbsp
Bay leaves: 2
Cinnamon stick: 1
Cardemom : 2
Cloves: 2
Cashewnuts: 10 to 12
Basmati Rice: 3 cups
Chilli powder
Turmeric

Take oil in a heavy bottomed vessel, and fry bayleaves, cinnamon, cloves and cardamoms for couple of mins, then add I onion and chillies and fry until the onions are golden in color, then add the masalas, prawns, chilli powder, turmeric and salt and cook for 10 min. No need to add water at this time.

Now add rice and mix it well and add 3 and ½ to 4 glasses of water and close it with a lid.
Try to cook in medium heat so that the rice at the bottom of the vessel doesn’t get burnt.

Garnish with fried cashewnuts, coriander leaves and onions.  Serve on its own or with any raitha.

Compliment Each Other

A week before last weekend I posted  this dish but found many of u unable to access it at the time and getting a error with this post . So here we are, doing it all over again as I have plenty of time now as I met my deadlines at work so not taking any work to home, no elaborate meals as Rocky is off to India for a week ( Ya!! yet again in a month) for his bestfriend’s wedding.

When its only me and noel, I suddenly become  lazy, trying to find simple dishes and spend more time chatting n watching rubbish movies and spend time in all other activities other then cooking.This time I decided to something new, some wonderful recipes from other bloggers and I have chosen Sailu’s Set Dosa with Sesame seeds chutney which i will post tonite. The batter is left overnight for fermenting and can’t wait to try them today as friends are coming over for a sleepover.

Anyway dear rocky will back on tuesday and noel is already planning to bake something for him again.

Weekend Barbecue

We usually don’t get the opportunity to eat barbecues out too often here as u all very well know how unpredictable UK weather is. I remember last year, we did have good summer but my mom and sis were here and we are busy holidaying, so we didn’t have many sit outs. This year, we decided that as soon as the sun is out with some decent sunshine, so comes out our barbecue.

As we had 23 degrees Centigrade on sunday, It was perfect to take out the barbecue and we enjoyed grilled sticks and many other grilled delicacies.

Most people think of BBQ as throwing a few chicken breasts, sausages, ribs on the grill and flipping them so often.
I think BBQ is all about preperation and marinade.
If u plan ahead, it will trun out to the best BBQ ever

I love to marinade whatever i want to grill, over night and the prawns, chicken pieces will be succulent when u put them on the BBQ.

Here is the marinade:

Prawns Tikka:
Lemon: 1
Ginger Garlic paste: 2 tbsp
Turmeric: 1 tsp
Chilli powder: 2 tbsp( if u want it spicy)
Salt to taste
Oil : 1 tbsp
Mix all these ingredients in bowl with prawns and leave overnight.
Next day soak bamboo skewers for 1/2 hr in cold water so that they don’t get burnt and thread these prawns onto the skewers and Cook over barbecue until tender, turning after two minutes on each side and serve immediately
An Enticing BBQ treat thats looks fantastic.

Chicken Tikka:

I add tikka masala for chicken breasts cut into small cubes.
And the same method explained above goes for this as well.

For us the pleasures of a Wonderful Barbecues has just started and many more to come with many dishes to try and experiment and most importantly enjoying family n friends
